Baked Catfish with Soy and Ginger Sauce Recipe

Ingredients

  • 1 lb. Catfish fillets
  • 1 cup Chicken broth
  • 1 tbl. Rice vinegar
  • 1 tbl. Soy sauce
  • 1 tsp. Cornstarch
  • 1/4 tsp. Ground red pepper
  • 3 Onions (chopped)
  • 1 Ginger root (peeled)

Method

  1. Place the catfish fillets into a baking tray and add 1/4 cup of chicken broth.
  2. Sprinkle the catfish with green onions and red pepper.
  3. Bake in an oven preheated to 450°F for 15 minutes.
  4. While the catfish is cooking, prepare the sauce.
  5. Take a skillet and fry the remaining onion and ginger until golden brown.
  6. Pour in the rice vinegar, soy sauce and water into the skillet and bring to the boil.
  7. Pour the sauce over the catfish.
  8. Bake for a further 5 minutes and serve.
